(hwa) the thin serum of milk remaining after the casein and fat have been removed; it contains proteins and the bulk of the lactose and water-soluble vitamins and minerals. The whey proteins, chiefly lactalbumins and lactoglobulins, constitute the majority of the protein content of human milk.
